Our story
Meet the people behind the fire
from Dutch beginnings to Tassie tastebuds
G'day, I'm Jeremy. I spent years cooking in restaurant kitchens, and it was at an Italian place called Ilpatio, in the Netherlands, that I really fell for pizza. Back home in Tasmania, our neighbours ran a wood-fired pizza stall at Salamanca, and that was my first taste of proper wood-fired baking. I was hooked.
So my dad, Paul, and I bought a run-down old Dutch doughnut trailer, the kind that served oliebollen, a traditional Dutch treat. Dad did a lot of the hard work, stripping out the old oil setup and turning it into a pizza kitchen with a wood-fired oven at its heart. We ran it around the Netherlands for about two years, and slowly word spread that we weren't too bad.
Then it was time to come home. We stripped the trailer back and shipped it to Tasmania, and it squeezed into the container with two centimetres of height to spare. We called it The Ember Box, because that's exactly what it is: a wood-fired oven in a box. (The Dutch Oven was on the list too, but that was maybe a little too cheeky.) Our first event back was at Hobart Brewing Co, less than 100 metres from where the container landed.
These days I fire up pizzas from the South Arm Peninsula with a small crew, using fresh Tasmanian produce, and my wife Sam's been part of the story from the start. We've been at it in Tassie for over a decade now.
When we first came home, our first regular spot was the original Hobart Brewing Company — and more than ten years later, after they moved to a new site, we're back with them again. Some things are worth coming back to.
If I had to sum it all up in one word, it'd be authentic.

Questions & answers
Can you cater for dietary needs?
Allergy and dietary requirements can be accommodated in most circumstances. Vegan cheese is available, and we offer gluten friendly bases. Please note our gluten friendly bases are cooked on the same oven floor as our other pizzas, so we can't guarantee them 100% gluten free. Talk to us about any allergies when you enquire.
What do you need from the venue?
To ensure a smooth setup, we'll need safe access and a flat surface. If your venue includes steep or gravel driveways, just let us know in advance and we'll talk it through with you.
What happens if it rains?
Wet weather doesn't affect us — our enclosed food van setup keeps us well protected from wind and rain.
How far do you travel?
We cater for events across Southern Tasmania. If your event is further afield, just ask us. We're always happy to chat.
How early should we book?
Get in touch as early as you can, especially for weddings during peak season, as popular dates can fill up.
Can we try the food before we book?
Absolutely. Come and see us at the Ember Bus in the Hobart Brewing Company beer garden, 284 Argyle St, North Hobart, Wednesday to Sunday.
